I absolutely love summer! But along with all of the fun activities comes the HEAT! The heats not bad when your outside swimming but when your inside with a hot oven going it’s not that much fun. That’s one of the reasons I don’t bake as much during these hot months and try to come up with as many recipes as I can that can be made without an oven. I have been making no bake cookies for years now and they are actually one of my favorite types of cookies but last week I decided to try something a little different using Coconut. These cookies are super easy to make and you probably already have all of the ingredients you need in your kitchen.
What You Need:
2 Cups of Sugar
1/2 Cup of Milk
1 Stick of Unsalted Butter
1 Tablespoon of Vanilla
3 Cups of Quick Oats
2 Tablespoons of Cocoa
2 Cups Shredded Coconut
Directions:
Boil together the sugar, milk and butter until smooth. Turn off the heat and add vanilla. In a separate bowl mix together the oats, cocoa and coconut. Pour the sugar mixture over the oats and mix well. Drop by spoonfuls on waxed paper and chill. Makes about two dozen cookies.
These are the perfect treat for summer time because they are simple, easy to make and taste so good!
