Easy No Bake Cookies Recipe

One of my favorite treats to make during the summer is my Easy No Bake Cookies Recipe. These no bake cookies are not only super easy to make, but they don’t require much cooking.  And the best part about this easy no bake cookies recipe, is that you don’t have to turn your oven on to bake them. I will warn you though, they are really good and it’s hard to have just one.

Easy No Bake Cookies Recipe

1 3/4 Cup Sugar
1/2 Cup Milk
1/2 Cup of Butter
4 Tablespoons of unsweetened cocoa powder
1/2 cup of creamy peanut butter
3 cups of quick cooking oats
1 tsp of Vanilla

In a medium saucepan mix together your milk, sugar, cocoa and butter.

Stir together well until everything is melted and mixed together.

Bring this mixture to a rapid boil and boil for EXACTLY 90 seconds. It’s important that you don’t undercook or overcook or the cookies will not set up right. When the mixture is at a rapid boil start the 90 seconds and then remove from the heat.
Add the 1/2 cup of peanut butter and 1tsp of vanilla to the chocolate mixture and mix together well.
In a separate bowl add your oats and chocolate mixture together and mix well.
Your mixture should not be runny but it will be soft until you harden it up in the fridge.
 On a cookie sheet covered with wax paper drop a spoonful at a time of the cookie mix onto the paper.
Now, place the cookies in the fridge for about 30-45 minutes or until they have set. Make sure you let the cookies set long enough to harden up completely, otherwise they will fall apart. These no bake cookies are delicious and never last more than a day at our house. This easy no bake cookies recipe will make around 20 pretty good size cookies.
