Getting dinner on the table during the week can sometimes be a challenge. That’s one of the reasons I always have some sort of pasta in my pantry and look to the Pasta Fits website for inspiration and recipes. Pasta is such a versatile food and can be paired with pretty much anything to make a delicious and easy dinner recipe any night of the week. Recently we were looking for a easy pasta recipe and came across this recipe for Southern Italian Pasta Fagioli on the back of a pasta box. With a few of our favorite ingredients and minor adjustments to the recipe we made this pasta dish our own and the whole family loved it!
So here’s what you’ll need for this SUPER easy pasta recipe.
- 1 Tablespoon Olive Oil
- 1/2 Cup each finely chopped carrot, celery and onion
- 2 cloves of garlic, minced
- 2 Cups Chopped Spinach
- 1 Cup chopped mushrooms
- 4 Cups of Water
- 4 Beef Bouillion Cubes
- 1 Can (14oz) diced tomatoes in juice
- 1 tsp dried basil leaves
- 1/2 tsp pepper
- 1 Ditalini Pasta, uncooked
- 1 Can red Kidney Beans, undrained
- 1 Pound of Cooked Hamburger meat
This recipe is really easy to make and you’ll have it on the dinner table in 30 minutes or less. To get started heat your oil in large sauce pan over medium heat. Nex add carrot, mushrooms, spinach, onion and garlic. Add Beef. Cook stirring occasionally for 10 minutes or until vegetables are tender and meat is brown. Drain the excess fat from beef.
Stir in water, bouillon, tomatoes and juice, basil and pepper and heat to a boil. Stir in uncooked pasta, reduce heat to med-high. Cook for 10 minutes and be sure to stir frequently to prevent sticking. Don’t forget to stir in beans next. Add salt and pepper to taste and serve while hot.
This recipe makes 6-8 servings so there is plenty to go around. We served this with a side of cornbread and it was amazing. With the holidays only a few weeks away I will be busier than ever and hosting many family get togethers so this will definitely be a dish that I will be serving again. It’s easy but yet it’s also a dish that I would be proud to serve. Plus it’s fairly inexpensive and we could all use a little extra cash during the holidays.
