Lately I have been on a crock pot recipes kick. My husband just recently went back to work which leaves me alone..with 3 kids, one which includes a baby, every day. Dinner time was becoming quite the issue while juggling homework, a baby and all the after school activities. So with my trusty crock-pot (I love it so much) I can put dinner in while the baby is napping in the morning, set it and forget till dinner time. This week alone I have used my crock-pot almost every night. Tonight was the easiest meal by far. We had Slow cooker Roast Beef Sandwiches aka French Dip Sandwiches and oh were they good.
Slow Cooker French Dip Sandwiches
Ingredients:
- 2-3 pound Chuck or Rump Roast
- 2 Cans of Beef Consommé
- 1 tablespoon Worcestershire sauce
- Hoagie Buns
Directions:
Making these slow cooker roast beef sandwiches is super easy. First you need a good Crock-Pot. This is the one I have used for years and it was very inexpensive.
Next you will need to put your roast into this crockpot add the 2 cans of Beef Consommé (you can find it here), and the 1 tablespoon of Worcestershire sauce. Put the lid on the crockpot, set it on low for 7-8 hours and forget it. You could easily do this recipe before you head out to work or at the beginning of your day like I do and it will be ready for dinner time. We like to serve our french dip sandwiches on a Hoagie bun but you could put the french dip on mashed potatoes, rice or eat the meat all by itself. It’s really that good.

The great thing about these Slow cooker Roast Beef Sandwiches is that they can also be prepared ahead of time. They make a great, and easy, freezer meal. Just put the roast, beef consommé and Worcestershire sauce in a gallon sized freezer Ziploc bag like this one and freeze it. When you’re ready to use it just thaw it out in the fridge the day before and then throw it all in the crock pot when you’re ready to cook it.
