You probably already know that breakfast is the most important meal of the day. It’s also the meal that most people skip because they just don’t have time to make it. And I understand, I really do. Mornings are crazy busy at my house too. But what if I told you that there was a way that you could have a delicious, easy, hot breakfast on the table in under 20 minutes.
Simply Potatoes is a line of refrigerated, prepared potatoes proudly made by the Crystal Farms Company. You might recognize the Crystal Farms brand name. They are also known for high-quality cheese, eggs, butter and English muffins found in the dairy section. We’re a huge fan of the Simply Potatoes products not only because they are delicious, but they are quick and easy. You can eat them alone or add them into a recipe. Simply Potatoes are made with real ingredients and are always fresh, never frozen. They are located in the refrigerated dairy section at your local grocery store, normally by the eggs.
I was challenged to come up with a recipe that was quick and easy using Simply Potatoes and a Potato Skillet immediately popped into my head. My husband and I both ate breakfast skillets growing up, so with that in mind we hit the kitchen to recreate this yummy breakfast skillet.
Potato Bacon Egg Cheese Skillet
Ingredients:
- 1 Package of Simply Potatoes Diced Potatoes (Any Flavor)
- 5 Large Eggs
- 1/2 Cup of Sliced Mushrooms
- 1/2 Cup of Spinach
- 1/4 Diced Cherry Tomatoes
- 3 strips of cooked bacon (Chopped)
- 1/2 tsp pepper
- 1 teaspoon salt
- 1/2 shredded mozzarella cheese
- 1 Tsp of Oil
Directions:
- First, cook the potatoes according to the package directions. Set aside.
- Heat a large skillet with 1 Tablespoon of Oil.
- In the large skillet sauté the mushrooms, cherry tomatoes and spinach until tender. About 1-3 minutes.
Next add the eggs, diced bacon, salt and pepper to the large skillet and whisk all ingredients together.
Once the eggs are cooked you are going to add this mixture to the potatoes and gentle fold in the ingredients together. Be careful not to mash up the diced potatoes. Add the cheese on top and serve immediately.
A Quick and Easy Breakfast
This recipe takes less than 20 minutes from start to finish. You can easily prep the veggies the night before and just pour everything into the pan the next morning. Simply Potatoes require no peeling or shredding. You just open the bag and pour into the skillet. That’s it! Don’t settle for a boring breakfast or skip out because you don’t have time.
