Low Fat Banana Nut Bread Recipe…YUM!

I love banana nut bread but I don’t like the calories and fat that come along with it! Last year I started making a Lower Fat banana nut bread that is so yummy! I had some pretty ripe bananas that needed to be used yesterday so I decided to make up a batch. Here is the recipe:

You will need these ingredients:
2 very Ripe bananas
2 Eggs
2/3 Cup of Sugar ( I use 1/2 splenda 1/2 sugar)
1/4 Cup of Applesauce
1/3 Cup nonfat milk
1 Tablespoon Vegetable Oil
1 Tablespoon of Vanilla extract
1 3/4 Cup of Flour
2 Teaspoons of baking powder
1/2 teaspoon baking soda
1/2 teaspoon of salt
1/3 cup chopped walnuts (optional)
Preheat your oven to 350 degrees and spray your pan with non-stick cooking spray
In a large mixing bowl beat your 2 eggs and sugar until light and fluffy which takes about 3 minutes.
Mash your bananas in a seperate bowl. I just use a fork and mash them until they are not very lumpy.
Add your mashed bananas, applesauce, milk, oil and vanilla to the sugar/egg mixture and mix until well blended.
In another mixing bowl sift together the flour, baking powder, baking soda and salt. Be sure to mix ingredients well.
Add the Flour mixture into the banana mixture and mix together just until blended.
If you are adding Walnuts now is the time to mix those in. My son doesn’t like nuts so I make half of batch without nuts and the other half with them.
Pour your batter into your prepared pan I used a mini loaf baking pan but you can use a large loaf pan.
Bake at 325 for about 30 minutes or until golden brown. If you use a large loaf pan you will need to increase your baking time to 1 hour.
These banana nut bread loafs are sooo GOOD! I made them yesterday morning and by the evening the were GONE! The taste so good and noone knows that they are healthier for them!
