Eating healthy has always been a bit of a struggle to me. However, as I’ve reached my thirties I’ve quickly learned that the pounds will pack on quickly when eating the wrong foods.  Over the past year I have found a few healthy snack recipes from Gwyneth Paltrow ‘s Book As Good As it Gets. These healthy snack recipes are not only delicious but they are super good for you. Don’t let the names of these recipes scare you away because they are REALLY good! Even my kids go crazy for the Recipe for Kale Chips. It’s a must have at our house.

Healthy Snack Recipes

The Best Green Juice:
5 Large Kale Leaves
1 Lemon, Zest
1 Large Apple, Roughly chopped
A inch-piece of fresh ginger
1 sprig of fresh mint

Push all of the above ingredients through your juicer. If you don’t have a juicer you can chop all of the ingredients and pop them into a powerful blender with 1/2 cup of water. Pass the mixture through a fine-mesh stainer and drink immediately.

Instant Berry + Coconut Sherbet
2 Cups of frozen berries (whatever you like)
1/2 cup of coconut milk
2 Tablespoons of good-quality maple syrup

Combine everything in a food processor and pulse until completely smooth. Eat Immediately or you can freeze.

Kale Chips:
1 big bunch of Kale, stems discarded and leaves torn in 1 1/2 inch pieces
2 Tablespoons of Extra Virgin Olive Oil
Coarse Sea Salt

Preheat the oven to 400 degrees. Toss the kale with olive oil and spread out on two baking sheets. Sprinkle with the salt and roast, stirring occasionally, for 12-15 minutes or until light and crispy brown. Eat like potato chips.

These are just a few healthy snack recipes that I enjoy. They are all so easy to make and even my kids like them all.
