Meal times in our home are never easy. Between getting both kids off two different schools in the morning and after school activities, it seems like we are always rushed when it comes to eating. Breakfast time is the worst though. This year my kids are in different schools and they start at different times.  This makes the mornings pretty hectic and cooking a big breakfast, let alone having time to sit down and eat it, can be challenging. However, after a few years of practice I have a few tricks up my selves when it comes to making a quick, delicious, and sometimes on-the-go breakfast.

Eggo Waffle Sandwich

Eggo waffles are one of my go to breakfast foods to serve my kids on busy mornings. They are super easy to make and both of my kids love them. But to spice things up every now and then I like to turn an ordinary Eggo waffle into a delicious breakfast sandwich. The Eggo sandwich is super easy to make and only takes a few minutes, which is perfect for those mornings when you just don’t have any extra time.

Here’s what you need:

  • 1 Eggo Waffle
  • 1 Tablespoon of Peanut Butter (or more if you like PB)
  • 1/2 Tablespoon of Syrup

The first thing you need to do is make sure you have all of your ingredients. Target is a great place to stock up on all our breakfast needs including the Eggo Waffles. You can find them in the freezer section of your local store.

Next cook the waffles according to the directions on the box. Basically just pop them in the toaster for a few minutes while you work on your other morning routines.

Once the Eggo waffles are done, place 1 on a paper towel. Spread 1 tablespoon of peanut butter all over the top of the waffle.

Next fold the waffle in half and enjoy! You can wrap your Eggo Waffle sandwich up in the paper towel and eat it while you get ready or in the car on the way to school.
