One of my favorite comfort foods growing up was chicken pot pie. I don’t know if it’s crust, the chicken or the creamy vegetables but something about a pot pie just warms my soul. But making a chicken pot pie from scratch can be time consuming and I’m here to eat it, not slave away in the kitchen making it. So I have come up with an easy chicken pot pie recipe that helps me to do just that.
Before you start making your easy chicken pot pie recipe, you need to make sure you have all the ingredients. There is nothing worse than being in the middle of cooking and realizing that your out of something. So head to your local Walmart and pick up everything you need. The Tyson Grilled & Ready Fillets and Birds Eye Protein Blends can be found in the frozen food section.
Easy Chicken Pot Pie Recipe
- 1/3 Cup Butter
- 1/3 Cup Flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 3/4 cup chicken stock
- 2/3 cup milk
- 2 cups of Tyson Grilled & Ready Chicken Breast Fillets-Cut up and Thawed
- 1 10 ounce package of mixed vegetables like Birds Eye Protein Blends
- 1 1/2 cups cooked diced potatoes
- 2 10 inch prepared pie crusts (1 for top and 1 for the bottom)
In a medium sauce pan, melt the butter on low heat.
Blend in the flour, salt and pepper. Cook over low heat and stir constantly until completely mixed together.
Remove from the heat. Stir in the milk and broth. Heat up the sauce until boil. Let boil for about 1 minute while stirring the sauce constantly.
Stir in the chicken, veggies and potatoes. Set aside.
Line the bottom of a pie plate with one of the prepared pie crusts.
Pour in the filling. Place the other prepared pie crust on top of the filling. Pinch the edges of the crust around the pie plate to seal the crust. Cut small slits in the top of the crust to vent.
Cook in the oven at 425 degrees until the crust is golden brown. About 30-35 minutes.
