Blueberry Buckle Recipe

Last week I was looking for something fun and inexpensive to do with my kids and my nephew. There is a local blueberry farm where you can pick fresh blueberries so we decided to take a drive to the town over and pick some blueberries for the day. When we arrived the sign says if you pick 2 buckets for the farm the 3 bucket of blueberries is free. So we rolled up are sleeves and started picking. We actually ended up with 20 pounds worth of bluerries and we were able to keep just over 5 pounds for free! So of course with all of these blueberries I had to make something with them so we decided to make a Blueberry Buckle Cake.

Ingredients:
1/4 Cup softened butter
3/4 Cup of Sugar
1 Egg
2 Cups all-purpose flour
2 tsp baking powder
1 tsp salt
1/2 Cup of Milk
2 Cups of Fresh Blueberries
Topping Ingredients:
2/3 Cup Sugar
1/2 Cup all-purpose flour
1/2 tsp ground cinnamon
1/3 Cup butter

Directions:
Preheat oven to 375 degrees.Cream together softened butter and sugar.

Beat in the egg to the butter/sugar mixture.
In another bowl combine the flour, baking powder and salt.
Slowly add the flour mixture to the cream mixture, alternating with milk. Mix well.

Fold in the Blueberries and pour into a greased 9-in square baking pan.

Next your going to make the topping. In a medium sized bowl combine the sugar,flour and cinnamon.

Cut in the butter until your mixture becomes crumbly. You also want to make sure that your butter is cold otherwise it will make the mix creamy instead of crumbly.

Here is what the mixture should look like.

Now sprinkle this mixture over the blueberry mixture

Bake at 375 degrees for 40-45 minutes or until you can stick a toothpick through the middle and it comes out clean. It took me about 45 minutes to fully cook.

I will warn you that this cake will go quick! As you can see from the picture I couldn’t even snap the picture quick enough before someone had snatched a piece.

This is a very simple yet incredibly delicious treat for any occasion. It’s great with coffee or for breakfast. But warning..it is addicting!
