Potatoes are pretty much a staple food here in our home. There are so many different ways that you can cook potatoes to make the perfect side dish or even the main course. One of our favorite meals to make with potatoes is Twice Baked Potatoes but with a twist. If the baked potato is going to be the meal than I will try and add some sort of protein and that’s how I came up with the Steak Stuffed Twice Baked Potato Recipe.
Ingredients:
3 Large Baking Russet Potatoes
6 oz of Seasoned Steak Strips Cooked I used 1 package of Tyson’s Fully Cooked Steak Strips
1/2 Cup of Milk
4 Oz of Shredded Cheddar Cheese
1/2 Cup of Sour Cream
Bacon Bits for Topping
Salt and Pepper To taste
Olive Oil
Directions:
The great thing about this recipe is that not only is it an all in one meal but it’s really easy to make. The first thing you need to do is wash and scrub your russet potatoes well and preheat your oven to 400 degrees F. Scrub them good and then brush a little bit of olive oil all over the potato. Next sprinkle a generous amount of salt all over the potato skins. Now take a fork and pierce the potato on all sides so that it cooks evenly.
Bake your potatoes on a cookie sheet at 400 degrees F for about an hour. It may take a littler longer if you have larger potatoes. After they are done carefully remove them from the oven. Cut them in half and remove the innards, but leave about 1/2 inch of potato in there.
Place the potato shells back onto the cookie sheet. I lined mine with parchment paper for easy clean-up.
In a large bowl add your potato innards, 1/2 cup of milk, cheese, sour cream and salt and pepper to taste. You can add more of any of these ingredients or less it’s really a personal preference on the consistency you like. I added about 4 ounces of cheese but if your a cheese lover I would definitely add more. Now mix the ingredients together well, you can either do this by hand or use a hand mixer.
Fill the bottom of the potato shells with the steak slices and press down with a spoon.
Spread the yummy potato mix on top of the steak slices and top with extra cheese and bacon bits.
Now put these little beauties back in the oven at 350 degrees for about 10-15 minutes or until the cheese is melted.
So what did my little taste testers think of the Steak Stuffed Twice Baked Potatoes? They loved it even my pickiest eater Jeremy who never likes cheese actually asked for seconds.
Our family loves this Twice Baked Potato recipe. It’s an easy weeknight dinner that doesn’t really require any prep besides baking the potatoes. If you are looking for a lower fat version replace the cheese, milk and sour cream with a low fat or fat free version and swap the steak with chicken.
