Recipe books have become a thing of the past. Sites like Pinterest have now taken center stage when it comes to providing moms with easy and delicious meals to feed their families. However, if your like me, Pinterest can be a bit overwhelming at times with all the amazing recipes that look really pretty but aren’t that practical for an easy meal solution.

Strawberry Poke Cake

Ingredients:
1 Box of White Cake Mix (Plus ingredients to make cake)
1 3oz Box of Strawberry Jell-O
1 8 oz container of Cool Whip
1 Cup Boiling Water
1/2 Cup Cold Water

  • Prepare the cake mix according to the box directions and cool in a 13×9 inch pan. Cool the cake for 15 minutes. Pierce the cake with a fork about 1/2 inch apart all over the cake.
  • Add boiling water to gelatin mix in a large bowl and stir for about 2 minutes or until the gelatin is completely dissolved. Stir in the cold water, mix together and pour over the top of the cake. Place in the fridge for about 3 hours.
  • Next frost the top of the cake with Cool-Whip and place back in the fridge for another hour. This cake would be great for summer picnics or even holiday get-togethers. If you don’t like Strawberry gelatin you can substitute for your favorite flavor.
