We are only a few days into the New Year and so far I have been doing pretty well with my goals to start eating healthier. One of my biggest issues is my ever so present sweet tooth that I can’t seem to get to go away. I’ll be the first to admit that I have a problem but instead of depriving myself I have decided to find a way that I can have my cupcake and eat it too. A few months ago I was flipping channels and came across an episode of Dr. Oz that featured some Easy Cupcake Recipes that just so happens to be lower in calories and fat than your traditional cupcake. I put one of these easy cupcake recipes in the back of my mind and pulled it out this week to see how was when put to the test.
Super Easy Cupcake Recipes
All you need for this easy cupcake recipe is 1 Box of your favorite Cake Mix. ( I used a marble cake mix) and 12 ounces of Club Soda. Preheat your oven according to the box directions. Then mix the cake mix and club soda together with a mixer on medium speed for about two minutes. Line your cupcake pan with cute liners and fill these up half way. Cook in the oven for the recommended time on the back of the cake box.
The Verdict:
The first thing I noticed when I took a bite of these cupcakes were that they are super moist. I almost felt like they weren’t done yet but they were just really soft inside. They are really, really good! I’m not gonna lie and say that they are so much better than the cupcakes with eggs, oil and milk but they are really tasty especially since they contain way less calories. My kids even tasted a few and then a few more and a few more, and well you get the picture. Overall these are a great substitute for people wanting have their cupcakes and eat them too without all the added calories.
