This easy chicken stroganoff recipe is the perfect meal to make when your short on time. In less than 30 minutes you will have a delicious, homemade meal on the table. This stroganoff recipe only requires a few ingredients, many which you probably already have on hand. Weeknights are usually so crazy at our house during the school year that I have to cook something that is quick and easy and this Chicken Stroganoff definitely does the trick. It’s also been taste-tested and approved by both of my kids who just so happen to be very picky eaters.
Chicken Stroganoff Recipe
1 1/2 LBS of Boneless Skinless Chicken Breast, cut into 1 inch pieces
1 LB of Sliced Mushrooms
1 Cup of Sour cream
1/8 tsp of nutmeg
Salt and pepper to taste
Parsley Flakes to garnish (Optional)
4 Cups of Cooked Egg Noodles
To make this delicious stroganoff recipe:
1. First heat about 1 tablespoon of oil into a large skillet over medium high heat. Sprinkle the chicken with a little bit of salt and pepper (to taste) and add the chicken, cook until lightly browned on all sides. Once cooked put the chicken into a bowl and set aside for later.
2. Next add a little more oil to the skillet and turn down the heat to about medium. Add the mushrooms and sauté for around 1 minute. Next add a tablespoon of water to the pan and stir. The mushrooms will also start to make their own liquid. Let the mushrooms cook for about 10 minutes. At about 9 minutes add the nutmeg and stir.
3. Add the cooked chicken to the mushrooms and stir well. Turn off the heat and add the sour cream. Make sure the heat is off or the sour cream with get too hot and curdle. The sauce will be thick but you can thin it out by adding a small amount of water until you get the consistency that you like.
4. Serve the chicken stroganoff on a bed of cooked egg noodles and enjoy!
