I really love brownies. There is nothing that can compare to that sweet, soft, chocolate taste that comes when you bite into a brownie. If I could have it my way, I would eat brownies morning, noon and night. Of course if I did that I would probably grow a few sizes, but hey a girl can dream can’t she! With the Spring weather moving in I foresee a lot more brownies in my future. The reason is they are easy to make and easy to take.
Being a family that loves to be outside, we often pack our lunch and head out to the park in the spring. It’s so much fun to have a picnic with your family and it’s a great way to come together and create memories. In my picnic basket we normally have the same things. Sandwiches, chips, vegetables, water and juice and you guessed it, brownies.
One of my go to recipes when making brownies is a recipe that I got from SamsClub.com. This Pecan Brownies Recipe with Carmel Sauce is so good. The brownies are moist and full of flavor, everything a brownie should be.
Pecan Brownies with Caramel Sauce
- [u]Brownies:[/u]
- 3/4 Cup All Purpose Flour
- 1/4 tsp. Baking Soda
- 4 1 oz squares of bittersweet or sweet chocolate, coarsely chopped
- 10 TBSP of I Can’t Believe it’s Not Butter
- 3/4 Cup Sugar
- 2 Eggs
- 1/2 Cup Chopped Pecans
- [u]Caramel Sauce:[/u]
- 3/4 Cup Firmly Packed Brown Sugar
- 6 TBSP of I Can’t Believe It’s Not Butter
- 1/3 Cup Heavy Cream or Whipping Cream
- 1/2 tsp of apple cider vinegar or fresh lemon juice
- For BROWNIE, Preheat Oven to 325 degrees. Line 8-inch baking pan with aluminum foil, then grease and flour foil, set aside.
- Combine flour with baking soda in small bowl, set aside.
- Microwave chocolate with I Can’t Believe It’s Not Butter. Spread in medium microwave safe bowl at HIGH for 1 minute or until chocolate is melted. Stir until smooth.
- Beat in sugar, then eggs with spoon. Next beat in flour. Evenly spread into prepared pan.
- Sprinkle with pecans.
- Bake at 325 for 40 minutes or until toothpick comes out of the center of the brownie clean. Cool.
- FOR CARAMEL SAUCE, bring brown sugar and I Can’t Believe It’s Not Butter to just a boil in medium sauce pan, over high-heat stirring occasionally. Reduce heat to medium and cook 5 minutes or just until thickened, do not stir. Stir in vinegar.
- Pour Caramel Sauce around the brownie and top. Add Ice Cream if desired.
