My kids both love bananas but it never fails that there is always a few that start to get brown faster than the others. Normally I will make a batch of banana bread but this time I decided to tweak my recipe a little and make something a little bit different. Banana Muffins recipe is super easy to make and are great for breakfast or an afternoon snack. Here is the recipe:
1 1/2 Cups of Flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp of salt
3 ripe Bananas mashed
3/4 Cup White Sugar
1 Egg, Slightly Beaten
1/3 Cup of Oil
Topping:
1/3 Cup Brown Sugar
2 Tbsp of Flour
1/8 tsp of ground cinnamon
1 Tablespoon of butter
Directions: Preheat your oven to 375 degrees and lightly grease your muffin pan or line with cupcake liners
In a large bowl, mix together your flour, baking soda, baking powder and salt. In another bowl mix together your mashed bananas, sugar, egg and oil and beat well with a mixer.
